V posledn\u00edch letech se medovina dost\u00e1v\u00e1 v\u00edce a v\u00edce do obchod\u016f, jej\u00ed v\u00fdroba toti\u017e nikdy tak \u00fapln\u011b nezmizela a v na\u0161ich zem\u00edch se vyr\u00e1b\u00ed do dnes.V\u00fdroba medoviny nen\u00ed \u00fapln\u011b jednoduch\u00e1. Je trochu choulostiv\u011bj\u0161\u00ed, ne\u017e t\u0159eba v\u00edno \u010di pivo. Vyr\u00e1b\u00ed se tak, \u017ee se sm\u00edch\u00e1 voda a med ve zvolen\u00e9m pom\u011bru tak, aby m\u011bl n\u00e1poj dostate\u010dnou cukernatost. Sm\u011bs se p\u0159eva\u0159\u00ed, seberou se ne\u010distoty a p\u0159idaj\u00ed se kvasn\u00e9 kultury. Kva\u0161en\u00ed prob\u00edh\u00e1 v sudech, pop\u0159\u00edpad\u011b v kovov\u00fdch n\u00e1dob\u00e1ch. Jakmile medovina dokvas\u00ed, p\u0159efiltrujeme ji a p\u0159end\u00e1me do men\u0161\u00ed n\u00e1doby, v n\u00ed\u017e prob\u00edh\u00e1 dokva\u0161ov\u00e1n\u00ed. To m\u016f\u017ee trvat klidn\u011b a\u017e dva roky. Dnes se tento proces urychluje n\u011bkolika filtracemi, kdy se kal jednodu\u0161e p\u0159efiltruje a nemus\u00ed se pracn\u011b sb\u00edrat. Posledn\u00edm procesem je takzvan\u00e1 dizertace, kdy se medovina dochut\u00ed a dobarv\u00ed, aby odpov\u00eddala standartu. Barva samoz\u0159ejm\u011b z\u00e1vis\u00ed na barv\u011b pou\u017eit\u00e9ho medu. Ten by m\u011bl b\u00fdt dostate\u010dn\u011b kvalitn\u00ed. Pokud nen\u00ed dostate\u010dn\u011b barevn\u00e1, pak se p\u0159id\u00e1v\u00e1 karamel, kter\u00fd ji dobarv\u00ed. Medovina se tak\u00e9 mus\u00ed dolihovat tak, aby m\u011bla dostate\u010dn\u00fd obsah alkoholu, proto\u017ee kva\u0161en\u00edm dos\u00e1hneme maxim\u00e1ln\u011b 13% medoviny.Samoz\u0159ejm\u011b existuje spousta druh\u016f medoviny, m\u016f\u017eete si po\u0159\u00eddit medovinu s bylinkami, ko\u0159en\u00edm (sko\u0159ice) nebo t\u0159eba jinak p\u0159ipravovanou. Jsou medoviny, kter\u00e9 se t\u0159eba nep\u0159eva\u0159uj\u00ed a pou\u017e\u00edv\u00e1 se do nich ten nejkvalitn\u011bj\u0161\u00ed med.
